Spicy lemongrass dippng sauce
You may decide to raise or lower the amount of chilli and chilli oil in this recipe depending on your taste. I find my preference alters with mood, the weather and the chillies themselves so find it best to have a tiny taste of each chilli before deciding how much to add.
3 cloves garlic, very finely minced
1 stalk lemongrass, very finely minced
1 lemon, juice only
50ml rice wine vinegar
1 tbsp fish sauce
2 small bird's eye chillies, thinly sliced
1 tbsp chilli oil, the Chinese kind with roasted chilli flakes
1 tbsp palm sugar
2 tbsp water
1 handful each chopped parsley and coriander or mint
Black pepper, ground
What to do
Mix together all the ingredients and taste, adding more palm sugar, water, chilli, lemon or anything else that you feel needs more representation in the sauce. It should taste additively sweet, tangy, hot and salty.
